Manuka Honey with Yuzu Cheesecake


1 cup Granita biscuits – crushed
¼ cup Chopped Walnuts
70 g melted Butter
3 x 250 g blocks cream cheese
½ cup Sugar
¼ Cup Manuka Honey with Yuzu
Rind of 1 lemon
2 eggs
Rind of a lemon or ¾ cup lemon curd.


  1. Combine the crushed biscuits with the walnuts in a bowl and add the melted butter.  Press into the base of a springform cake pan and chill for a few hours.
  2. With an electric mixer, mix the cream cheese until it is smooth. Add the sugar, lemon rind and the honey.  Mix again.  Then beat in the eggs one at a time until combined.
  3. Add the mixture to the chilled base and back in a 160 C oven for approx. 35-45 mins, or until firm with a slight wobble in the centre. Allow it to cool in the oven with oven door open a little.  Then put in the fridge to chill for a few hours.
  4. Remove from the pan to serve and finish with grated lemon zest on the top or spread lightly with lemon curd if you prefer.
