Ingredients:
100 g Soft Goats Cheese
250 g Cream Cheese
1& ½ Tbsp Manuka Honey MGO 30 or MGO 83
Good grind of Salt and Pepper
3 - 4 Tbsp chopped nuts of your choice
4 Tbsp chopped dried apricots
50g Cheetos cheese and bacon balls
The stalk of a capsicum (pepper)
Allow the cream cheese to come to room temperature to soften, then add it to the bowl of an electric mixer with the Goat’s cheese, salt and pepper, Manuka honey, chopped nuts and chopped apricots.
Mix with the paddle attachment until all the ingredients are combined.
Lay out a sheet of cling wrap and with a rubber spatula pile the cream cheese mixture onto it and wrap it up forming it into a ball shape. (see picture below)

Refrigerate until firm, a few hours to overnight.
Crush the Cheetos with a mortar and pestle or rolling pin until it becomes a powder.
Remove the cheese ball from the cling wrap and spoon the cheetos powder over the cheese pressing it in with the back of a spoon until the whole thing is coated.
Add the stalk from the capsicum to the top of the cheeseball to resemble a pumpkin. Keep refrigerated until 30 minutes before you are ready to serve.
Delicious with crackers, crusty bread or bread sticks, or vegetable sticks.
