Honey & Ginger Glazed Carrots with Rosemary

Ingredients:

1 kg  - 1.2 kg Carrots peeled (approx. 15 large carrots)
65 g  Unsalted Butter
50 g Manuka Honey with Ginger
2 sprigs rosemary – Remove the leaves from the stalk
Salt & Pepper

Method:
1.  Chop the carrots into long wedges making sure they are all fairly even in size, and arrange in a single layer on a large baking tray lined with baking paper.  Season with the salt and pepper.  Preheat the oven to 190C

2.  Add the butter and the Nature’s Gold Manuka Honey with Ginger (If you prefer it, you can cut the ginger from the honey into smaller pieces) to a saucepan over a medium heat, and stir with a wooden spoon until well combined.

3.  Drizzle the honey and butter mixture evenly over the carrots and sprinkle with the rosemary.

4.  Bake in the oven for 30-45 minutes or until tender and slightly caramelised.
