Manuka Honey Custard with Strawberry Compote

Custard Ingredients:

2 cups milk
4 egg yolks
2 Tbsp Sugar
1/2 tsp Vanilla extract
1 Tbsp Cornflour
50 g Nature's Gold Manuka Honey MGO 30

Strawberry Compote Ingredients:

225 g fresh strawberries chopped
1 Tbsp Sugar
! ½ Tbsp Orange juice
1 Tbsp Cornflour

Method - Custard

  1. Whisk the egg yolks in a jug with the cornflour and sugar until combined.  Add the honey and mix well.
  2. Gently heat the milk and vanilla extract in a saucepan on the stove until warm – not hot. Remove from the heat and mix in the egg mixture until it is thickened.  If the custard needs to be thickened more you can return it to the heat, stirring until it reaches the desired thickness.
  3.   Transfer to a bowl to cool.  Place some plastic wrap directly over the custard so that it does not create a skin.   Place in the fridge to chill.

Method - Compote          

  1. Place the strawberries, orange juice and sugar in a pan and gently heat until the strawberries start to soften and break down.
  2. In a small bowl add the cornflour to the water and mix until combined.
  3. Add the cornflour mix to the strawberries, continue to gently heat, stirring with a wooden spoon until the mixture thickens.
  4. Remove from the heat and transfer to a bowl. Chill before serving with the custard.
