Apple & Blueberry Muffins

Ingredients:

440 g Spelt flour (or wholemeal if you prefer)
1 Tbsp Cornflour
2 tsp Bicarb soda
2 apples, peeled, cored and chopped finely
180 g dates, pitted and chopped
2/3 cup Manuka honey MGO 30
300 g Blueberries
410 ml Water

Method:

1.       Preheat the oven to 180 C

2.       Mix the flour, cornflour and bicarb in a large bowl and add the apples, dates and honey.  Mix until combined.

3.       Add the water slowly until combined until the consistency resembles a batter and gently incorporate the berries.  (The mixture should not be too wet, if it is add a little more flour.)

4.       Add some muffin cases to a 12 hole muffin pan and spoon the mixture evenly into the cases.

5.       Bake until golden and cooked through when a skewer is inserted (approx. 25 mins)

6.       Place on a wire rack to cool
