The Bees Knees Cocktail

Ingredients: (makes 1 cocktail)

½ cup Manuka honey MGO 30
½ Cup water
½ medium lemon
60 ml Gin
Lemon peel for garnish
A saucer/ small plate of sugar 


  1. Add the water and Honey to a small saucepan and heat gently until dissolved.  Set aside to cool.  Chill in fridge if possible.
  2. With a vegetable peeler, remove some twists of peel from the lemons for garnishing before juicing.
  3. Cut the lemon in half and juice it.
  4. Fill a cocktail shaker with ice cubes and add 30ml of the cold syrup, the gin, and the lemon juice. Shake well.
  5. Rub the rim of a Martini glass with lemon juice and turn it upside down coating the rim with the sugar.   Pour the cocktail into the glass and garnish with the lemon peel or a slice of lemon.
