Honey, Date and Walnut Cake

1 ½ cups SR flour
½ tsp Bicarb soda
½ tsp Cinnamon
½ tsp Nutmeg
1 cup chopped walnuts
1 ½ cups chopped dates
100 g butter
1 cup water
½ cup Brown Sugar
1 Tbsp Manuka Honey MGO 30
1 egg


  1. Preheat the oven to 180 C
  2. Add the flour, bicarb soda, cinnamon, nutmeg and walnuts into a bowl and stir to combine.
  3. In a medium saucepan add the Butter, Honey, Brown sugar and water until melted, add the dates and stir well.  Set aside for 10 minutes.
  4. After 10 minutes, whisk the egg and add it to the flour mixtutre and then add the butter and date mixture.  Stir with a wooden spoon until all the flour has incorporated.
  5. Add the mixture to a greased loaf pan or large (23 cm) 9 inch round cake tin. Bake for 45 minutes or until a skewer comes out clean when inserted.  (If the cake starts to get brown early, cover with foil and continue cooking.)
  6. Cool on a wire rack. This is lovely as it is or served with butter.
