Ingredients:
400g SR Flour
¼ tsp Salt
70g cold unsalted Butter, cubed
2/3 Cup Milk
2 Tbsp MGO 30 Manuka Honey
2 Tbsp Caster Sugar
½ cup mixed dried Fruit
Method:
1. Add the flour and salt to a bowl, stir, add the Butter and rub in with your fingertips until the mixture resembles breadcrumbs.
- Add the Honey, mixed Fruit and Milk and stir through until the dough comes together, staying soft but not too sticky. If the mixture is too dry add a dash of milk.
- Lightly flour a board and form the damper into a round shape and flatten slightly to make a disc. Score the top with a knife.
- Place the damper onto a lined baking tray and bake in a preheated oven at 175-180C for 30 minutes or until golden.
