Sweet Manuka Aussie Damper

Ingredients:
400g SR Flour
¼ tsp Salt
70g cold unsalted Butter, cubed
2/3 Cup Milk
2 Tbsp MGO 30 Manuka Honey
2 Tbsp Caster Sugar
½ cup mixed dried Fruit

Method:
1.  Add the flour and salt to a bowl, stir, add the Butter and rub in with your fingertips until the mixture resembles breadcrumbs.

  1. Add the Honey, mixed Fruit and Milk and stir through until the dough comes together, staying soft but not too sticky. If the mixture is too dry add a dash of milk.
  2. Lightly flour a board and form the damper into a round shape and flatten slightly to make a disc. Score the top with a knife.
  3. Place the damper onto a lined baking tray and bake in a preheated oven at 175-180C for 30 minutes or until golden.
