These cookies can be adapted to suit your own taste, by adding whatever flavour profile of honey you prefer. You may also like to add some nuts, a bit of cinnamon or some lemon zest for different variations of this delicious basic cookie dough.
Ingredients:
360 g plain flour
½ tsp salt
¼ tsp bicarb soda
1 tsp baking powder
226 g unsalted butter, softened
200 g sugar
120 ml Nature’s Gold Manuka honey MGO 30
2 large eggs
1 tsp vanilla extract
Method:
1. Add the flour, salt, baking powder and bicarb into a large bowl and stir well to combine
2. Mix the butter and sugar with a mixer until light and creamy.
3. Add the honey and mix on a medium speed, until incorporated, scraping the sides of the bowl as needed to combine all the mixture.
4. Crack the eggs into a separate bowl and add them one at a time to the mixture, mix on low after each addition of the egg, then add the vanilla mixing for a few more seconds to combine, scraping down the sides of the bowl again.
5. Slowly add the flour a little at a time, and mix slowly until all the flour is just combined.
6. Cover the bowl with cling wrap and chill for 2-3 hours.
7. Once chilled, preheat the oven to 175 C, (350 F)
8. Take 1 ½ TBSP of the dough and roll them into balls, and place on a lined cookie tray allowing room in between for each cookie to spread. You will need to make them in several batches – they will not all fit on one tray.
9. Bake for 10-12 minutes. The cookie will still be soft when they come out of the oven. Leave for 10 minutes before transferring to a wire rack to cool.
*You may like to add some crushed nuts to the balls before baking or press one blanced almond into the top of each ball before baking.
