Grilled Nectarine with Parma Ham

Ingredients

3 *Nectarines cut in half and pitted
Spray oil
5 Mint leaves finely chopped
Manuka Honey MGO 30
6 round slices of Burrata cheese (Big enough to top each nectarine)
3 rashers of Streaky Bacon, Parma ham or Prosciutto cut into halves (to make 6 pieces)

Method

1.        Cook the bacon, ham or prosciutto in a frypan and set aside.

2.       Add the spray oil to a griddle pan (or normal frypan if you do not have one) and place the nectarine halves flesh down and cook for 2-3 minutes (you should see the griddle marks on the flesh.)  Turn the nectarines over and cook skin side for a further 2 – 3 minutes.

3.       Place the cooked nectarines onto the serving plate, top with the ham, cheese and chopped mint, then drizzle with the Manuka Honey.  Serve immediately.

 

*The nectarines ideally should be sweet to achieve the best flavour.  They should also be ripe, yet firm enough that they won’t turn to mush when grilled.
